Ingredients
  

Vegetables

  • 2 cups zucchini, grated firm, medium-sized, squeeze out excess moisture
  • 1 cup carrots, grated firm, bright orange, squeeze out excess moisture

Batter

  • 0.5 cup all-purpose flour
  • 1 egg
  • 0.25 cup milk
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Optional Add-Ins

  • 2 tbsp fresh herbs (parsley, dill, or chives) finely chopped, optional
  • 0.25 cup Parmesan or cheddar cheese grated, optional

Instructions
 

Prepare the Vegetables

  • Wash and grate zucchini and carrots using a box grater or food processor.
  • Sprinkle grated vegetables with salt and let sit in a colander for 15-20 minutes to draw out moisture.
  • Squeeze out excess water using hands or a clean kitchen towel.

Mix the Batter

  • In a large bowl, whisk together flour, baking powder, salt, and black pepper.
  • In a separate bowl, mix egg, milk, and optional lemon zest.
  • Combine wet and dry ingredients, stirring until just combined; avoid overmixing.
  • Fold in grated zucchini, carrots, and optional herbs or cheese.
  • Let batter rest for 10 minutes.

Cook the Fritters

  • Heat a skillet over medium heat with 1/4 inch of oil (light olive oil or avocado oil recommended).
  • Drop spoonfuls of batter into the hot oil, flattening slightly, and cook 3-4 minutes per side until golden brown.
  • Transfer fritters to a paper towel-lined plate to drain excess oil.

  • Ensure vegetables are well-drained to avoid soggy fritters.
  • Use a high smoke point oil like light olive oil or avocado oil for best results.
  • Experiment with dipping sauces like Greek yogurt, sriracha mayo, or cucumber-dill dip.
