Ingredients

skinless chicken breasts, cut into 1.5-inch pieces

bell
peppers
cut into chunks

large red onion
cut into chunks

soy sauce
1/4

pineapple juice

honey or brown sugar

tbsp
sesame oil
1/2
tsp
garlic powder
1/4
tsp
ground ginger

fresh pineapple
cut into 1 to 1.5-inch chunks
Instructions
Cut the chicken into 1.5-inch pieces and set aside.
In a bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), sesame oil, garlic powder, and ground ginger.
Add the chicken to the marinade and let it sit for at least 30 minutes (or up to 4 hours for more flavor).
If using wooden skewers, soak them in water for 30 minutes.
Cut bell peppers, red onion, and fresh pineapple into chunks.
Assemble skewers by alternating chicken, pineapple, and vegetables.
Preheat grill to medium-high heat and oil the grates.
Grill kabobs for 4-6 minutes per side, until chicken reaches 165°F.
Remove from grill and let rest for a few minutes before serving.
Notes
For extra flavor, marinate the chicken for at least 4 hours.
Wooden skewers should be soaked in water for at least 30 minutes to prevent burning.
You can bake the kabobs at 400°F for 25-30 minutes if grilling isn’t an option.
Try serving with lemon rice, grilled potatoes, or teriyaki sauce for extra taste.
