Ingredients
  

  • 1.5–2 lbs boneless skinless chicken breasts, cut into 1.5-inch pieces
  • 3–4 bell peppers cut into chunks
  • 1 large red onion cut into chunks
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 3 tbsp honey or brown sugar
  • 2 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1 fresh pineapple cut into 1 to 1.5-inch chunks

Instructions
 

  • Cut the chicken into 1.5-inch pieces and set aside.
  • In a bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), sesame oil, garlic powder, and ground ginger.
  • Add the chicken to the marinade and let it sit for at least 30 minutes (or up to 4 hours for more flavor).
  • If using wooden skewers, soak them in water for 30 minutes.
  • Cut bell peppers, red onion, and fresh pineapple into chunks.
  • Assemble skewers by alternating chicken, pineapple, and vegetables.
  • Preheat grill to medium-high heat and oil the grates.
  • Grill kabobs for 4-6 minutes per side, until chicken reaches 165°F.
  • Remove from grill and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken for at least 4 hours.
  • Wooden skewers should be soaked in water for at least 30 minutes to prevent burning.
  • You can bake the kabobs at 400°F for 25-30 minutes if grilling isn’t an option.
  • Try serving with lemon rice, grilled potatoes, or teriyaki sauce for extra taste.
