Ingredients
  

  • 1 stick, ½ cup unsalted butter (for flavor and binding)
  • 1/3 cup creamy peanut butter (rich and nutty)
  • 10 oz mini marshmallows (for sweetness and stickiness)
  • 1/2 teaspoon vanilla extract
  • 4 cups gluten-free crisp rice cereal
  • 1/8 teaspoon flaky sea salt (optional, for flavor boost)

Instructions
 

Prepare the Baking Pan:

  • Grease an 8- or 9-inch square pan (for thicker treats) or a 9×13 rectangular pan (for more servings) with butter.

Melt Peanut Butter and Marshmallows:

  • In a large saucepan over low heat, melt the butter and peanut butter. Add the mini marshmallows and stir constantly until smooth. Remove from heat and stir in vanilla extract.

Combine with Cereal:

  • Mix in the crisp rice cereal until fully coated. Sprinkle the flaky sea salt for added flavor, if desired.

Set the Mixture:

  • Transfer the mixture into the prepared pan. Gently press it down to create an even layer without compressing it too hard.

Cool and Cut:

  • Let the treats cool at room temperature for 30-45 minutes. Once set, cut them into 16 squares using a greased knife for clean cuts.

Notes

  • Store treats in an airtight container at room temperature for up to 3 days.
  • To freeze, wrap individual squares in plastic wrap and place in a freezer-safe container. They can be frozen for up to 2 months.
  • Enhance the treats with optional mix-ins like chocolate chips, crushed candies, or sprinkles.
  • For a nut-free alternative, use sunflower seed butter.
