Ingredients
  

  • 6-8 slices - soft white bread crusts removed, flattened
  • 1/4 cup - vegan cream cheese or regular cream cheese
  • 1/2 cup - diced strawberries or other fruit
  • 2 large - eggs
  • 1/4 cup - almond milk or dairy milk
  • 1 tbsp - maple syrup
  • 1/8 tsp - sea salt
  • 1 tsp - cinnamon optional, for custard mixture
  • 1 tbsp - melted butter for cooking
  • Cinnamon sugar mixture for coating, optional

Instructions
 

  • Flatten bread slices with a rolling pin after removing crusts.
  • Spread cream cheese and diced strawberries onto each slice, then roll tightly.
  • Whisk eggs, almond milk, maple syrup, cinnamon, and salt in a bowl to create the custard.
  • Dip each roll-up in the custard mixture, coating evenly.
  • Cook in a non-stick pan with melted butter over medium heat until golden brown (2-3 minutes per side).
  • Optional: Roll cooked roll-ups in cinnamon sugar for extra sweetness.

Notes

  • Use day-old bread to prevent sogginess.
  • Fillings can vary: try Nutella, peanut butter, cheese, or ham.
  • For vegan versions, substitute eggs with flaxseed meal (1 tbsp flaxseed + 2.5 tbsp water per egg) and use plant-based milk.
  • Store leftovers in an airtight container (fridge: 4 days; freezer: 2 months).
