Instructions
Flatten bread slices with a rolling pin after removing crusts.
Spread cream cheese and diced strawberries onto each slice, then roll tightly.
Whisk eggs, almond milk, maple syrup, cinnamon, and salt in a bowl to create the custard.
Dip each roll-up in the custard mixture, coating evenly.
Cook in a non-stick pan with melted butter over medium heat until golden brown (2-3 minutes per side).
Optional: Roll cooked roll-ups in cinnamon sugar for extra sweetness.
Notes
Use day-old bread to prevent sogginess.
Fillings can vary: try Nutella, peanut butter, cheese, or ham.
For vegan versions, substitute eggs with flaxseed meal (1 tbsp flaxseed + 2.5 tbsp water per egg) and use plant-based milk.
Store leftovers in an airtight container (fridge: 4 days; freezer: 2 months).
