Ingredients
  

  • 8 oz pasta (penne or rotini recommended) Short, tubular shapes work best
  • 2 cups cherry tomatoes Mix of red and yellow for color and flavor
  • 8 oz feta cheese (block, preferably Greek) Crumble just before adding
  • 2 cloves garlic Minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt and pepper To taste

Instructions
 

  • Cook pasta according to package directions until al dente. Drain, reserving some pasta water.
  • Preheat oven to 400°F (200°C).
  • In a baking dish, toss cherry tomatoes with minced garlic, olive oil, and Italian seasoning.
  • Place block of feta cheese in the center of the tomato mixture.
  • Bake for 30-35 minutes, until tomatoes have burst and feta is soft.
  • Stir the baked mixture to create a creamy sauce.
  • Add cooked pasta to the dish and toss to combine. Add reserved pasta water if needed for creaminess.
  • Season with salt and pepper to taste.

  • Use fresh, ripe cherry tomatoes for best flavor.
  • Reserve pasta water to adjust sauce consistency.
  • Add fresh herbs like basil or oregano for extra flavor.
