Ingredients
  

Wet Ingredients

  • 2 eggs
  • 1/2 cup vegetable oil or applesauce
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 1.5 cups shredded zucchini grated, no need to squeeze out moisture
  • 1.5 cups blueberries fresh or frozen, do not thaw if frozen

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup melted butter

Instructions
 

Prepare Ingredients

  • Preheat oven to 325°F (165°C). Grease and flour a loaf pan.

Mix Wet Ingredients

  • In a large bowl, whisk together eggs, oil or applesauce, vanilla extract, and brown sugar until well combined.
  • Fold in shredded zucchini.

Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.

Add Blueberries

  • Toss blueberries in a little flour to prevent sinking, then gently fold them into the batter.

Bake

  • Pour batter into the prepared loaf pan and spread evenly.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool

  • Remove from oven and let cool in the pan for 10-15 minutes.
  • Invert onto a wire rack to cool completely before slicing.

Notes

  • Store in an airtight container at room temperature for up to 2 days.
  • For longer storage, wrap tightly and freeze for up to 3 months.
  • Optional: Add 1 cup of chopped walnuts or pecans for extra crunch.
  • Optional: Add 1/2 teaspoon of cinnamon or nutmeg for warmth.
  • Optional: Drizzle with a glaze made from powdered sugar and lemon juice.
