Ingredients
  

Crust and Topping

  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 tsp salt
  • 1 cup cold unsalted butter cut into small pieces
  • 2-3 tbsp ice water

Blueberry Filling

  • 4 cups fresh blueberries rinsed
  • 0.5 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp lemon zest optional, for extra flavor

Instructions
 

Prepare the Crust

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large bowl, mix flour, sugar, and salt. Cut in cold butter until mixture is crumbly.
  • Add ice water, 1 tablespoon at a time, until dough comes together. Do not overmix.
  • Press two-thirds of the dough into the prepared baking dish to form the crust. Reserve the remaining dough for topping.
  • Par-bake the crust for 10-12 minutes until lightly golden. Set aside to cool slightly.

Make the Blueberry Filling

  • In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring occasionally, until blueberries burst and mixture thickens, about 5-7 minutes.
  • Remove from heat and stir in lemon zest, if using. Let cool slightly.

Assemble and Bake

  • Pour the blueberry filling over the par-baked crust, spreading evenly.
  • Sprinkle reserved dough over the filling as a crumble topping.
  • Bake for 25-30 minutes until the topping is golden brown and the filling is bubbly.
  • Let the bars cool completely in the pan before cutting into squares.

  • Ensure the bars cool completely before cutting to avoid a gooey mess.
  • For extra crunch, add chopped pecans or walnuts to the topping.
  • Serve with vanilla ice cream or whipped cream for an enhanced experience.
