Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup white whole wheat flour
  • 1/3 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/3 cup cold butter cubed
  • 3/4 cup whole milk (or plant-based milk for a dairy-free option)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups diced apples (Granny Smith or Honeycrisp, peeled and cut into 1/4-inch pieces)

Instructions
 

Prepare the Apple Mixture:

  • Peel and dice the apples into small 1/4-inch pieces. Set aside.

Mix Dry Ingredients:

  • In a large bowl, combine all-purpose flour, white whole wheat flour, brown sugar, baking powder, salt, cinnamon, nutmeg, and allspice.

Incorporate Butter:

  • Use a pastry cutter or two forks to cut in the cold butter until the mixture resembles coarse crumbs.

Mix Wet Ingredients:

  • In a separate bowl, whisk together the milk, egg, and vanilla extract. Gradually stir the wet mixture into the dry ingredients until just combined.

Fold in Apples:

  • Gently fold the diced apples into the batter, ensuring even distribution without overmixing.

Shape the Fritters:

  • Use a cookie scoop or spoon to drop batter onto a parchment-lined baking sheet, shaping each fritter to about 2-3 inches in diameter.

Bake:

  • Preheat the oven to 400°F. Bake fritters for 12-14 minutes or until golden brown and puffed up.

Prepare Glaze:

  • Mix powdered sugar with milk to create a smooth glaze. Optional flavor variations include adding vanilla extract, maple syrup, or cinnamon.

Glaze the Fritters:

  • While the fritters are warm, drizzle or brush the glaze on top for added sweetness and shine.

Notes

  • For a healthier option, swap refined sugar with coconut sugar or stevia.
  • Whole wheat flour can be partially substituted for a fiber-rich option.
