1
large egg
1
tsp
vanilla extract
1 1/2
cups
diced apples
(Granny Smith or Honeycrisp, peeled and cut into 1/4-inch pieces)
Instructions
Prepare the Apple Mixture:
Peel and dice the apples into small 1/4-inch pieces. Set aside.
Mix Dry Ingredients:
In a large bowl, combine all-purpose flour, white whole wheat flour, brown sugar, baking powder, salt, cinnamon, nutmeg, and allspice.
Incorporate Butter:
Use a pastry cutter or two forks to cut in the cold butter until the mixture resembles coarse crumbs.
Mix Wet Ingredients:
In a separate bowl, whisk together the milk, egg, and vanilla extract. Gradually stir the wet mixture into the dry ingredients until just combined.
Fold in Apples:
Gently fold the diced apples into the batter, ensuring even distribution without overmixing.
Shape the Fritters:
Use a cookie scoop or spoon to drop batter onto a parchment-lined baking sheet, shaping each fritter to about 2-3 inches in diameter.
Bake:
Preheat the oven to 400°F. Bake fritters for 12-14 minutes or until golden brown and puffed up.
Prepare Glaze:
Mix powdered sugar with milk to create a smooth glaze. Optional flavor variations include adding vanilla extract, maple syrup, or cinnamon.
Glaze the Fritters:
While the fritters are warm, drizzle or brush the glaze on top for added sweetness and shine.
Notes
For a healthier option, swap refined sugar with coconut sugar or stevia.
Whole wheat flour can be partially substituted for a fiber-rich option.
Baked fritters are best served fresh but can be stored in an airtight container for up to two days.
Reheat in a 350°F oven for 5-10 minutes to regain crispness.
Variations include a cinnamon sugar coating, adding nuts or dried fruits, or stuffing whole apple slices into the fritters.
